I made this recently for a dinner party, and it was a hit!
The recipe from The Real Raw Kitchen is below with some minor changes I made during the process.

Changes I made to the recipe:

I added more avocados (because I love them) and more limes to the recipe as I was working with regular limes, NOT key limes. I used fresh squeezed limes. Taste test the filling and make sure it’s “limey” enough…don’t be shy with your limes! We decorated ours with sliced limes at the end. I also opted for raw honey and not the maple syrup…

The Secret Ingredient

My favorite “secret ingredient” is the spirulina – the ultimate dessert ingredient! I actually used Garden of Life’s Perfect Food, so the dinner guests had a real vitamin packed dessert! Perfect Food Raw is packed with 34 nutrient-dense, raw, organically grown greens, sprouts and vegetable juices.

RAW Key Lime Cheesecake

For this recipe you will need a 9 inch springform pan and a blender/food processor. You really need a high quality blender when making raw desserts. My 3 favs in order from least to most expensive: Ninja, Blendtec, and Vitamix

Ingredients

For the crust:

1 cup macadamia nuts
1 cup cashews
1/2 cup shredded coconut (raw, unsweetened)
1 teaspoon vanilla extract
1/2 teaspoon sea salt
3 dates, pitted

For the filling:

1 1/2 cups cashews (soaked for about 30 minutes)
2 avocados
1.25 cup lime juice (more if needed)
3/4 cup honey or maple syrup
2 tablespoons coconut water (or plain)
1/4 cup and 2 tablespoons of coconut oil/butter
3 tablespoons vanilla extract
1/4 teaspoon sea salt
1/2 teaspoon of Spirulina (I used Garden of Life Perfect Green Super Food)

Steps

For the crust:

Put the ingredients in a food processor and pulse until crumbly and sticking together a bit.
Dump the contents into the bottom of a 9-inch spring-form pan and press down until the entire bottom is evenly covered.
Place in freezer until you are ready to pour the filling on top.

For the filling:

Place everything save the coconut, vanilla, and salt into a high speed blender.
Blend until smooth.
Add the remaining ingredients and blend until everything is incorporated, but do not over blend.
Pour the filling atop the crust and then place the pie into the freezer for 2-3 hours.
Move to the frigerator and keep there until ready to eat.

Decorator as you wish with limes. Enjoy!
